A cap reads best as one continuous piece rather than a run of joints. Standup pieces of 4 to 12 square feet let a mason cap a wall or a pool edge with very few seams, which is the whole reason this grade exists.
Large faces mean fewer mortar lines and a wall that reads as stone rather than as tile. The 1 inch pieces are the usual choice here, set on a concrete backing with mortar.
A tread wants to be one stone the full width of the step. That is hard to do in patio grade and straightforward in standup, which is why stair work drives a lot of the demand for it.
Basins, spill edges and surrounds are all places where a joint is both a visual break and a leak path. Fewer, larger pieces solve both at once.
Set in a random pattern, standup gives a patio a quieter surface than smaller flagstone because there is simply less jointing across the same area. Pieces 2 inches and thicker can go on a compacted base.
Sills, hearths and bench tops are single piece jobs by nature. Standup is normally the only flagstone grade that can supply them without a seam.

A wall cap, a pool coping run, a stair tread or a window sill all read badly when they are broken up by joints, and a joint on a water feature is a leak path as well as a visual break. Standup lets a mason do those in single pieces. Used as paving it gives a quieter surface than smaller flagstone simply because there is less jointing over the same area.

Pieces thinner than 2 inches cannot bridge a flexible base. They are set on a concrete slab with mortar, which is skilled mason work and should be budgeted before the stone is ordered. Pieces 2 inches and thicker can be dry-set on a compacted sand, gravel or decomposed granite base, which is the cheaper install.
Whichever route you take, the base does most of the work. Road base, sand and decomposed granite are in base and ground materials, and the coverage calculator will size them by area and depth.
Order the whole job in one pull. Colour and character shift between quarry runs, so a second order weeks later may not match the first. Add 10 to 15 percent over your measured area for cutting and waste. Large pieces are heavy pieces, so plan site access and staging before the truck arrives.
